A healthy and simple vegan and gluten free burger made with nourishing adzuki beans and quinoa. These little burgers are great fresh or can be frozen, ready for a busy-day dinner that the kids will love.
2 cloves garlic
4 medium carrots
2 cups cooked quinoa
2 cups cooked aduki beans
1 tbsp chopped fresh herbs
½ cup oats (or ground linseed for gluten free) with ½ cup hot water
Use a food processor on pulse to chop the onion, garlic, carrots and tomatoes then add the rest of the ingredients and process until smooth (add more oats/linseed if they seem too sloppy).
Chill for half an hour. Heat the oven to 180 degrees C and then scoop dollops of the mixture onto greased baking trays or baking paper.
Flatten with wet hands. Bake for 40 minutes, flipping after 20-25 minutes. Leftovers can be frozen or chilled and kept in the fridge for a couple of days.
